Duck in tomato sauce


Ingredients for Duck Cooking in Tomato Sauce

Cooking duck in tomato sauce:

Step 1: Prepare the duck.

Before you cut the duck into slices or pieces, you need to pre-process it. To do this, take the duck fillet and rinse thoroughly under running water, then dry with paper kitchen towels. Then over open fire you need to singe the meat to remove all unnecessary feathers. Now put the fillet in a pan and fill it with water so that it covers the meat completely. Put it on a strong fire, bring to a boil, remove the froth, reduce the heat and boil for about 40 minutes. After that, remove the meat and cool it, then cut into wide slices.

Step 2: Cook the duck.

Cut the processed duck fillet into large pieces and fry in a pan with duck fat until golden brown. Then put the fried meat in a saucepan, pour water so that only pieces of duck are covered. Simmer for about 20 minutes.

Step 3: Fry the onion and mashed tomato.

Peel the onion, rinse under cold water and chop finely. Then lightly fry in the same duck fat on which the duck was prepared, add a spoonful of mashed tomato and continue to fry until the tomato becomes thick.

Step 4: Cook the sauce.

Heat a clean frying pan without oil over medium heat, add flour, and stirring constantly, bring to a brown color. Now pour in the juice that was formed during the stewing of the duck, mix well, add salt and ground pepper. Do not forget about the bay leaf, let the mixture boil. Pour the duck with ready-made sauce and simmer it until fully cooked.

Step 5: Serve the duck in tomato sauce.

Cool the finished dish slightly, place on plates or a serving dish. When serving duck in tomato sauce to the table, put garlic in the sauce, previously passed through the garlic press. Good appetite!

- - Boiled and steamed brown rice can serve as an excellent side dish for this dish.

- - As a decoration, use fresh herbs. Just divide the dill, parsley or basil into twigs and place on a dish.

- - To add spice to the dish, pour the prepared duck fresh with squeezed lemon juice.
