Potato meatballs


Peel the potatoes, then put them on the grater with small meshes.

In a bowl put the mashed potatoes, crushed garlic, eggs, flour, cheese on a small grater, then season with salt and pepper to taste.

Mix well until you get a paste.

With floured hands we begin to form the meatballs.

We fry them in hot oil.

Let them brown nicely, then take them out on a napkin to absorb the excess oil.

Serve hot or cold, plain or with a garlic yogurt sauce!

Baked mashed potatoes and rice

I brought you a simple and good recipe for fasting meatballs! Meatballs of potatoes and rice, made in the oven to be more fat-free and which are a little more dietary.

I know this recipe from some nuns. It was about 8-9 years ago, when, while on vacation, we found ourselves at lunch time at a monastery in Maramureș. As usual, the nuns invited us to dinner. I think it was fasting day, because among other vegetable goodies, I also received these potato meatballs.

I was a little shy to ask for the exact recipe, but anyway, I remembered that they are made from boiled potatoes and boiled rice and it was not difficult for me to make them at home.

The ones we ate at the monastery were fried in oil, but the nuns told us that if they have a holiday or are waiting for more guests, they make them in the oven, because it's easier for them.

It is the ideal recipe if you have some 3-4 tablespoons of scordolea (recipe here) or mashed potatoes that no one eats, or if you keep boiling potatoes for a salad, you can put 2-3 in plus for these meatballs.

They are easy to make and do not need any & # 8220liant & # 8221, they just need boiled potato and also boiled rice. They are soft, golden, tasty, fragrant.

They are also very good when they are hot, but we like them better after they cool down. We eat them for lunch or dinner with a salad or for breakfast with some olives or cherry tomatoes.

Potato meatballs - Snack ready in just 5 minutes - To prepare potato meatballs, you need the following ingredients:

Ingredient:

  • approx. 900 grams of potatoes
  • 2 small onions
  • 4 eggs
  • 2-3 tablespoons of flour
  • 2 tablespoons breadcrumbs
  • 1/2 cup oil
  • 150 grams of harder cheese
  • black pepper, salt

How is it prepared?

  1. Clean, wash and boil the potatoes in water with a little salt.
  2. Cut onions into small cubes.
  3. Grate the cheese.
  4. Grate the potatoes, then mix them with the cheese, onion and 2 eggs. Match with salt and pepper. Stir well.
  5. Mix the rest of the eggs well.
  6. Take a more consistent spoonful of the potato composition, shape it between your palms, give it flour, then egg and breadcrumbs and fry it.

Potato Meatballs with Lemon Sauce

Wash the potatoes well. Boil them in salted water. Drain, peel and strain. Leave to cool.
Incorporate the eggs, then add the flour, green parsley and knead an elastic dough, not very soft. Match the taste of salt and pepper.
Here you can proceed in two ways:
- molded in the form of a roll with a diameter of 6-7 cm and rolled in breadcrumbs, so that it penetrates the dough, forming a crust. Cut thick slices with one finger and place in a tray lined with baking paper, greased with a little oil
- flattened shapes of the right size that you roll in breadcrumbs, then transfer them to the tray lined with baking paper, greased with a little oil.
Put in the preheated oven for about 20-25 minutes, at 190-200 degrees, turning them halfway through or until they are done and nicely browned.
Keep them warm until the sauce is ready.

Lemon sauce
Melt the butter in a saucepan, add the flour, mix well, and after a few minutes quench with soup. Rub well so that they do not remain lumpy and simmer for about 5 minutes, stirring constantly or until the sauce begins to thicken.
Set aside and incorporate the peel, lemon juice and adjust the taste of salt.
Put in an arrival

Serve the potato meatballs while they are hot, sprinkled with lemon sauce, as a dish in itself or as a side dish next to fish, meat or various grilled dishes, etc.


Purple potato dumplings stuffed with cream cheese

Purple potato meatballs stuffed with cream cheese are my son's favorites. I discovered them by chance, when I was left with 2 tablespoons of purple mashed potatoes and I spread it on a slice of bread greased with cream cheese.
