Ingredients

  • 6 eggs
  • 1 Tablespoon butter, melted
  • 3 Tablespoons flour
  • 4 Tablespoons extra-virgin olive oil, plus more for the skillet
  • 1/2 small onion, thinly sliced
  • 1 clove garlic, minced
  • 1 Teaspoon mild curry powder
  • 2 medium potatoes, boiled, peeled, and lightly crushed with a fork
  • Fresh lemon juice, to taste
  • Salt and pepper, to taste
  • 14 Cups spinach, sautéed

Filling
1 onion, chopped
2 tablespoons unsalted butter
2 tablespoons flour
1 cup milk
1 pinch freshly grated nutmeg
1/4 cup minced fresh dill
1 package (20 ounce size) frozen chopped spinach, cooked and drained

Crepe Batter
1 cup flour
1/2 cup water, PLUS "PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons water
1/2 cup milk
3 large eggs
2 tablespoons unsalted butter, melted and cooled
1/2 teaspoon salt
3 tablespoons minced fresh dill
melted butter, additional

Sauce
2/3 cup chicken broth
2 large eggs
1/4 cup fresh lemon juice
